Sweet and Sour Cucumber Salad

   
  Ingredients:

    1/2 c  Water
      1 c  Cider vinegar;
           Non-nutritive sweetener;equivalent to 2 tbs sugar
      2 tb Dill pickle; chopped fine
  1 1/2 ts Salt;
      2 c  Cucumbers; sliced thin
      1    Stack celery; sliced thin;

 Methods:
Boil water, vinegar, sweetener, pickle, and salt.Place cucumbers and celery,slices in glass jar;pour boiling liguid over; cover and refrigerate overnight.Drain before serving.
 

Sweet and Sour Bean Stew


Ingredients:

      3 oz Navy beans; cooked
      3 oz Basmati rice; cooked
  1 1/2 oz Butternut squash; cubed
  1 1/2 oz Onion; chopped
  1 1/2 oz Raisins
      1 tb Safflower oil
    1/2 ts Thyme
    1/2 ts Garlic; minced
    1/2 ts Salt

Methods:
Combine all ingredients in medium saucepan. Set on stove over medium heat for about 20 minutes or until thoroughly heated. Stir occasionally. Serve at room temperature.

Surprise Pancakes (Vitell)

  
Ingredients:

      1 c  Whole wheat pastry flour
    1/2 ts Salt
    1/2 ts Baking soda
      1    Egg
      1 c  Milk OR soy milk
    1/2 c  Cooked brown rice
           Oil; for frying

Methods:
Mix the dry ingredients together in a bowl.In a separate large bowl whisk the egg with the milk. Mix the dry ingredients into the milk and stir in the rice. Heat 1 teaspoon butter or oil in a heavy skillet. When the skillet is hot and the butter sizzles, ladle a large spoonful of batter into it. When air  bubbles appear on the top, flip the pancakes and cook for a minute until brown. Remove from the skillet and keep warm in the oven until all are made.

Super-Easy Roasted Potatoes

    
     Ingredients:  

   Potatoes,
Oil
       Onion soup mix powder


Methods:
Mix one packet of onion soup mix with some oil.Cook the same as Roasted Cajun Potatoes.[Preheat an oven to 400.  Mix everything well in a roasting pan, making sure that the potatoes are coated with the oil and spices.Roast the potatoes in the oven for 45 minutes, stirring around every 15 minutes.

Super Sesame Sauce

    
  Ingredients:

    1 c  Tahini
      2    Garlic cloves
    1/8 ts Cumin
           Salt to taste
  1 1/2 c  ;water, cold
           Juice of 2 lemons (to taste)

Methods:
Put tahini,lemon juice and spices in a blender.Add 1/2 cup water and blend.Continue to drizzle in the water, scraping the sides, until the consistency you want. Great over pita bread sandwiches, or use as a dip for Vegetables. (You may want to leave it a little thicker for dips).
